GO TEAM Buffalo...


Super Bowl Sunday...
Everywhere I look lately you see all the recipes for things to eat this Sunday, most of them are for Buffalo Style chicken. So Kenneth and I researched a few websites and also got a recipe from yesterdays newspaper (which I am making for supper tonight, because I have to work Sunday)

Crock Pot Buffalo Sandwiches
  • 4 skinless/boneless chicken breasts
  • 1 bottle (your choice) buffalo wing sauce
  • 1/2 pkg (1 oz) ranch dressing mix
  • 2 T margarine
  • 6 WW buns
mix 3/4 wing sauce with dry ranch dressing...set aside
place chicken breast in oiled crock pot
pour sauce over chicken
cook on low 5-6 hours
shred chicken when done add margarine, heat 30 - 60 more minutes
place on buns with favorite vegetables...enjoy

TIP: any left overs can be used for buffalo pizza


Baked Buffalo Strips

  • 3 chicken breasts cut into 1" strips
  • 2 T Olive oil
  • 1/2 C soy sauce
  • red pepper flakes (to taste)
  • 2 T ketchup
  • 1 C honey
  • 1/2 t garlic powder
  • salt/pepper
Mix last 7 ingrediants together and coat strips, place in oiled baking dish'
Bake 375* for 1 hr



Deep Fried Buffalo Chicken

  • 3/4 C flour
  • 1/4 C cornmeal
  • 1/2 t pepper
  • 1/2 t cayenne
  • 1/4 t garlic powder
  • 1/2 t paprika
mix the dry ingredients

  • Cut 3 chicken breast into 1/2" strips
  • place 1 C milk and 1 egg into ziplock bag add chicken strip
  • marinade for 30 min. to 1 hr.
remove chicken from baggie and dredge in dry mix, deep fry at 375* for approximately 5 minutes. Toss with 1/4 C hot sause and 1 T melted butter. Don't forget the ranch dressing and celery on the side.
