“Cheese” Sauce
Prep: 10 minutes Cook: 10 minutes
Serves:Makes 2 cups
Ingredients
- 1/4 cup cooked peeled potato
- 2 cups water
- 4 ounce jar pimientos
- 1/2 tsp onion powder
- 1/4 cup nutritional yeast
- 3 tbsp cornstarch
- 2 tbsp fresh lime juice
- salt to taste (optional)
Directions
Blend the potato with 1/4 to 1/3 cup of the water in a blender. Add the remaining ingredients and blend until smooth. Pour into saucepan. Cook, stirring, until smooth and thick, 7 to 8 minutes.
Serve at once. The sauce will set when cool and can be reheated.
